2 cups Mama Lycha Rice Flour
Mama Lycha Vanilla
3 eggs
1 stick butter
1 cup sugar
1 tablespoon baking powder
Powdered sugar and jam of your choice
In a large bowl, break 3 eggs and mix with the melted butter.
In another bowl, add the 2 cups rice flour, 1 cup sugar, and 1 tablespoon baking powder and mix well.
Add the egg mixture to the flour mixture with a teaspoon of vanilla.
Beat until smooth and transfer to a muffin pan. Bake at 350° for 25-30 minutes.
Decorate with powdered sugar and jam.
Rice flour is healthier than traditional one because it has a lower amount of carbohydrates, and because it is made from rice, it helps control cholesterol levels.
