1 Mama Lycha panela
1 cup of water
4 cups flour
1 cup sugar
1 stick of vegetable shortening
1 egg
3 cloves
Cinnamon and star anise to taste
1 tablespoon yeast, 1 tablespoon salt, 1 tablespoon baking soda
In a saucepan add the piloncillo, cinnamon, cloves and water, cook over medium heat stirring occasionally until the piloncillo dissolves.
Strain and let it cool. Meanwhile, mix the flour, baking powder and baking soda on a surface to form a volcano.
Add the egg and butter, add the piloncillo syrup to the mixture and knead until blended.
Form a ball, cover with plastic wrap and refrigerate for 30 minutes.
Roll out the dough leaving a layer 1.5 centimeters thick. Cut the marranitos with your mold and place them on a greased tray or on waxed paper and glaze with egg. Now bake at 180 ºC for 15 to 20 minutes and they are ready.
Never stop stirring the piloncillo to get the consistency you need and avoid lumps of product.
