1 bag of Mama Lycha Cassava
Mama Lycha Plantain Leaves
1 bag of Mama Lycha Achiote
1 cup vegetable oil
2 cups chicken broth
Chicken broth for stuffing
Start by dicing the cassava (yucca), then use a blender to puree the yucca to a cheese-like consistency.
Drain the liquid from the cassava (yucca) and place in a large bowl.
In a bowl, mix one cup of oil with a little achiote to taste and stir well. Then add half a cup of this mixture to the bowl of the dough. This will add color to the mixture.
Start kneading in the bowl until the ingredients are integrated and add salt with a little chicken broth.
Place a plantain leaf over a piece of aluminum foil, followed by a portion of the cassava (yucca) dough. Flatten the dough and leave it in an oval shape to add the chicken filling.
Fold the plantain leaf on all four sides to completely cover the patty. Then fold the aluminum foil to cover as well. Repeat this process for all the patties you want to make.
In a pot of boiling water, place the patties covered in aluminum foil and steam for 40 minutes.
Wait about 10 minutes before removing the foil. After this time, they are ready to serve.
You can use a grater to shred the cassava if you prefer.
