2 Mama Lycha Tomato Sauces
Mama Lycha Hard Cheese Crumbles
5 eggs
1 tbsp minced garlic
1/2 chopped onion
1 chopped red pepper
2 chopped tomatoes
1 tablespoon bell pepper
1 teaspoon cumin
pinch salt
Chopped parsley
In a large skillet, add a little olive oil, garlic, onion and chopped celery. Cook over a medium-low heat until they caramelize, but do not let them burn.
Add the chopped peppers and 4 pureed peeled tomatoes. Stir well.
Add the Mama Lycha Tomato Sauce, paprika, cumin and salt to taste.
Add the eggs one by one in different parts of the pan. Cook for 5 to 7 minutes until the eggs are cooked to your liking.
Once cooked, add chopped cilantro and some hard cheese for garnish.
This dish is usually served directly in the skillet so that when it's time to eat, everyone can sit at the table and choose their portion.
