INGREDIENTS

    • Mama Lycha Hard Cheese Crumbles

    • 1 sliced cucumber

    • 1 cup purple olives

    • 1 purple onion, sliced

    • 2 cups cherry tomatoes

    • 1/2 cup parsley

    • 1 cup red wine vinegar

    • 1 cup olive oil

    • 1/2 cup Dijon mustard

    • Salt and pepper to taste

INSTRUCTIONS

    1. Make the dressing with 1 cup red wine vinegar, 1 cup olive oil, 1/2 cup mustard, salt and pepper to taste and mix well.

    2. To make the salad, in a bowl, add 1 sliced cucumber, purple olives, sliced red onion, cherry tomatoes and some chopped parsley and finally the Mama Lycha bean cheese.

    3. Add the dressing and toss well. 

Mama Lycha´s tip

This salad is perfect as a vegetarian option, but you can also add diced chicken if you like.
