INGREDIENTS
Mama Lycha Hard Cheese Crumbles
1 sliced cucumber
1 cup purple olives
1 purple onion, sliced
2 cups cherry tomatoes
1/2 cup parsley
1 cup red wine vinegar
1 cup olive oil
1/2 cup Dijon mustard
Salt and pepper to taste
INSTRUCTIONS
Make the dressing with 1 cup red wine vinegar, 1 cup olive oil, 1/2 cup mustard, salt and pepper to taste and mix well.
To make the salad, in a bowl, add 1 sliced cucumber, purple olives, sliced red onion, cherry tomatoes and some chopped parsley and finally the Mama Lycha bean cheese.
Add the dressing and toss well.
Mama Lycha´s tip
This salad is perfect as a vegetarian option, but you can also add diced chicken if you like.
