1/2 cup diced onion
1/2 cup diced carrots
Corn tortillas
Vegetable oil
Place the onion and carrot on top of a tortilla. Use a toothpick to secure them so the vegetables stay inside the taco.
Fry each taco in hot oil until it is golden brown.
To serve, place a base of sauce on the plate. Add the golden tacos (after removing the toothpicks), and garnish with more sauce, fresh cheese, and Mexican Style Sour Cream.
Make sure to fill the pan with a generous amount of oil when frying to ensure the vegetables are well cooked.
